As also requested, here’s the (approximate) recipe (because I didn’t measure things properly 😳,) for the honey, apple & walnut cupcakes!🧁 INGREDIENTS: 2 red apples 1 pear 2 ½ teaspoons ground cinnamon (to taste) 1-1.5 teaspoon mixed spices 1 tablespoon freshly squeezed lemon juice 158g all purpose gluten free flour blend ½ teaspoon xanthan gum, (omit if your blend already contains it or guar gum) 1 teaspoon baking powder ½ teaspoon salt Approx 140g olive oil (can use softened butter) 3 tbsp honey 2 (100 g (weighed out of shell)) eggs, at room temperature, beaten Lots of ground walnuts (approx 100g) INSTRUCTIONS: Instructions * Preheat your oven to 180. Put cup cake holders in cupcake tray * In a large bowl, place the dinely chopped apples & pear, and toss with some of the ground cinnamon, mixed spice, and the lemon juice. Set the bowl aside. * In a separate medium-sized bowl, place the flour, (xanthan gum?,) baking powder, and salt, and whisk to combine well. Set the bowl aside. * In another separate, large bowl with a hand mixer or the bowl of a stand mixer fitted with the paddle attachment, place the oil and honey, and mix. * Add the eggs and beat on medium speed until smooth. * Add the dry ingredients, and beat until just combined. The batter will be thick, but smooth. * Mix in apples, pear & walnuts to coat & transfer cake batter to the prepared tin. * Bake for 15-20 minutes. * Allow the cakecakes to cool for about another 15 minutes, and enjoy!
