The days between the second day of Passover (when the Jewish people were liberated) and the holiday of Shavuot (when the Torah was received) is known as the "Omer" and lasts for 49 days.
This period is used as a time of reflection and spiritual growth, and this is ritualized in the counting of each of these days. To count the Omer, each night during this period follow these two steps:
1) Recite the following blessing: "Baruch atah Adonai, Eloheinu Melech ha'Olam, asher kid'shanu b'mitzvotav v'tzivanu al sefirat ha'omer." This translates as "Blessed are You, Lord our God, King of the Universe, who has sanctified us with His commandments and commanded us regarding the counting of the Omer."
2) Enumerate which night of the 49-night period it is by saying "Today is one day of the Omer" on the first night, "Today is two days of the Omer" on the second night, and so forth for each of the 49 nights.
